The world, made here.
SNA’AP City Chocolates is the chocolate house of Chef Nouel Catis: city flavours he writes, made in the Emirates.
Others follow. We write first.
Since 2015, Chef Nouel has written recipes for homegrown GCC brands. Several became the dishes their menus are known for.
In 2022 he wrote the recipe that became Dubai chocolate. Two years later another Dubai brand made it famous, and they deserve that: a recipe only travels when someone puts it in front of the world. His first version was a different one, and he has kept writing since.
In October 2024 he founded SNA’AP.
From the bean to the bar, in the Emirates
SNA’AP turns two in October 2026. For its second chapter, every bar is made in the UAE, bean to bar, with a UAE chocolate maker. Four cities carry the range — Dubai, Abu Dhabi, Manila and Fukuoka — each rewritten from the filling up. The cities are where the flavours come from. The UAE is where we make them, and everything that comes next.

Where the taste began.
Before chocolate, there was pastry. Chef Nouel Catis learned to bake as a boy, helping his mother make the cakes and desserts she sold from home. Banoffee, apple pie, carrot cake, fruit cake, cinnamon rolls: these were the bakes that taught him what sweet should taste like.
Every recipe he has written since — for other brands, for SNA’AP, for the bar that became Dubai chocolate — carries something of that kitchen. The Baked Collection is where he went back to it.
Five childhood favourites, written into chocolate. Each one a bake the world grew up on, made here in the Emirates. Find them first in the SNA’AP Advent Calendar.
“Before I wrote recipes, I tasted them. These are the ones that taught me how.”
— Chef Nouel Catis
